Pick your mangoes right!
Depending what you are making or cooking with your mangoes you should
consider how ripe they are.
When making a dessert, jam or sweets you should pick a completely ripe mango, that is full in flavor and that it has reach its full sweetness. For sweets it doesn't matter if its soft or not.
When cooking or making grilled mangoes, relishes and other cooked dishes go for mangoes that are just 3/4 way ripe, that way they are going to be easier to handle (cut) and wont mush up or disintegrate while cooking.
